The A grind is for neutral to softer conditions and the S grind is more for neutral to firmer conditions. If you a are a good player, the S grind could work out of the sand, but being that it is soft sand and if you are not confident out of the sand, the A grind is probably more suited for it. If you are a little steep in your attack angle, the A grind would be slightly more forgiving. S Grind is for shallower attack angles.
I know Florida can have dry and hard conditions, or soft and wet conditions. The A grind is a good all around grind, but if the turf conditions are too firm, or if you like to open the blade up a lot, it might not be the best choice. I think, generally speaking, your thought on the A grind for the fuller shot wedge and the S grind for shots around the green is fine. Just would need to consider if the S grind would be the best out of soft sand. That part really just depends on your confidence level out of the soft sand. If you’re a good bunker player, the S should be fine.
