Generally the ideal way to fit a golfer for iron length, is to find longest shaft that he can consistently strike in the centre. ( yes i know hand to floor meausurement plays a part to, but thats done first not lastl

So a good fitter will have several clubs made up to varying lengths plus impact decals.

What club is normally used for this, like a 6 iron?

But then if we do that, but then 3-5 iron will progressively be too long for me, or am i missing something.

First, hand to floor measurement does nothing to help determine club length. Dynamically fitting lie like you described is the most correct way to do it. A club fitter worth his salt will know a general length to start you at after interviewing you and watching you hit a few shots. They may have you go up or down using varying length test clubs and impact labels if they feel the length you are hitting is not exactly right. He or she should then, by seeing the results and discussing with the player, be able to dial in the best length. Using a #6 or #7 iron is fine and is what most do. Dialing in that club does not mean that the 5,4,3 irons will not fit. Traditional irons progress in length and once the #6 or #7 iron are fit, the lengths are progressed accordingly.
