You can find a steel that would provide the same performance, but steel will never feel like graphite. The materials absorb shock and the low frequency vibrations that occur at impact, so they can’t really provide the same kind of feel. Also, depending on the weight of the graphite, you might not be able to match the weight in a steel option. You might, but it just depends on the weight of the graphite. Since the MMT is 75g, you don’t have a lot of steel options. Nippon makes the NS Pro Zelos 7 in that weight range, but it is high trajectory, softer profile steel shaft. If that fits you, then that would be the one. My guess is that those are not the features you need. There are some outstanding steel options at or below the 100 gram range that you might consider, but again, they will be heavier and not feel like the MMT’s. I would need to know what you’re looking for in ball flight before I could make suggestions, but you could just go look at the spec sheets online and see the trajectory profiles. I would need to know the flex as well.
If the feel and performance were that good with the MMT’s, you might want to work on getting use to the graphite look and go with what you experienced in the fitting. If not, and totally understand if you just don’t like the look, I would suggest testing. You can get just a #6 or #7 iron with the steel shaft you decide on and try in whatever head you choose before investing in the entire set.

Hey Britt, thanks for the response. Since you commented I see that some graphite options have been added to the pak selection. I went and tried some other steel irons and nothing felt quite as good so I have decided to go graphite. I’d like to go with the maltby shafts, but I see they are about 85g vs the 75g MMT S I was fit for. That’s not a huge change, only about a swing weight point I believe. The idea is the different will be fairly unnoticeable I hear. Regardless, the club I was testing with the MMT had the standard grip that comes with Taylormade clubs and I like to play midsized grips. When looking at the grips that come in the pak it seems like that is about a 10-15g difference. Seems like that will offset the change in shaft weight pretty nicely right?
