I went for a fitting and was recommended Srixon ZXI7 with KBS PGI 80 Stiff shafts. I’m considering going Maltby TS3 instead. Are the Pro Series stiff shafts in the PAKS similar enough to the KBS PGI?

The KBS PGI R flex and the Pro Series+ R flexes are pretty similar, with the Pro Series+ being very slightly more firm in the butt section. In the S flex comparison, the Pro Series+ is firmer in the mid and tip section, but almost identical in the butt section. So some similarities, but not exactly the same.
