I think it would be difficult to lower the trajectory with the Defiant since it is only available in a 10.5 degree loft. Loft influences trajectory far more than shaft stiffness, so the loft difference would be difficult to overcome with regards to lowering the trajectory. Since we do not know the specifications of the stiff shaft you have (flex profile, tip stiffness, etc.), we can only recommend going with low trajectory shaft within the shafts we carry. I would have to assume that the S flex you are playing would not be as low a trajectory shaft as the one we might recommend. Also, I would say you would need to stay with a 9.5 degree loft, or less. Another factor is the spin rate. Without seeing you hit your driver we can not determine if the higher flight is partly due to high spin, along with high launch angle. All that being said, if you want an ultralight shaft that will not launch it high, the Xcaliber SWD50 is the lightest, stiffest tip shaft on the market. We have had very high clubhead speed players hit it and be amazed that they do not hit it high, which most of them do when trying sub 60 gram shafts. If you don’t want to go that light, all I could recommend with the information I have would be to stay with the 9.5 degree loft and look at the options we carry that are designated as a low trajectory shafts.
