If you make an iron over length and do nothing to the head weight, the shaft will play to the same flex as it would at standard length. The club will feel heavier and may have a different flex feel, but the actual flex of the shaft does not change. If somehow you wanted to remove weight from the head to try to maintain a swing weight, then at the over length the shaft would be stiffer and play stiffer. If I am building a set for someone overlength I would not trim any extra from the tip.
