If you’re talking about just a few heads or a set, we can bend the heads 2 degrees flat. 3 degrees I am not as comfortable with, but we might be able to get there. If you’re talking about wanting a lot of heads, like a special product spec for hundreds to thousands of heads, it would require a new product design and tooling.

not to speak for Golfworks, but I would think they wouldn’t custom build unless you were ordering 200 sets of irons.
Normally stainless can be bent 2*, however it can still snap on the way there. I’ve bent a few 3-4* without breaking, consider myself lucky and I broke a sweat!
What they might be able to do is hand pick your irons that are 1* flat (or more) already from their stock, then bend to the required 3*.
Just an idea….
I’ve found most people I build for when requesting a loft or lie adjustment upfront, don’t actually need it. I normally build their 7 iron first according to length, then have them play the 7 iron for a week, when they come back, I make adjustments as required. Seldom do I need to adjust lie angle, loft is bent in the event they need specific gapping.
